Fire Up The Grill For

Pecan Stuffed Pork Chops

My kids love stuffed pork chops hot off the grill, and have been begging me to fire up the beast. The weather has been so cold, firing up the grill in March has been neither fun, nor a convenient cooking option for the last month or so, but with enough prodding they convinced me that it would be worth the effort so off I to to the store to buy the ingredients for the pecan stuffed pork chops they have a hankering for. I thought you might enjoy the recipe as well, so here it is hope you enjoy!

Grilling a stuffed pork chop is not a fast meal…..

Remember when buying your pork chops for stuffing to consider the thickness of the cut, and that a thick chop is going to need to cook a longer, slower cooking time so the meat gets cooked through to the center. Stuffing a pork chop helps maximize the moisture, tenderness, and flavor.

Pecan Stuffed Pork Chops

Ingredients

  • 4 Pork Loin Rib Chops Cut 1 ½ inches thick


Marinade:

  • ½ Tsp Finely shredded orange peel
  • ½ cup Fresh orange juice or frozen concentrate
  • ¼ cup Soy Sauce
  • Combine all ingredients in a zip-lock bag…Place pork chops inside and marinate for 6-24 hours turning occasionally.
  • Pork Chop Stuffing
  • ¼ Cup finely chopped sweet onion
  • ¼ Cup Celery
  • 1 Tbsp Butter
  • ¼ Cup Orange juice
  • ¾ Cup Corn Bread Stuffing Mix
  • 2 Tbsp. Coarsely chopped pecans


  1. Melt the butter in a large sauce pan or skillet over medium heat.
  2. Add the onions and sauté until translucent, about ten minutes.
  3. Add celery, and sauté until celery begins to soften, about 10 minutes more.
  4. Add Orange juice and bring to a boil
  5. Remove from heat, and scrape contents of skillet into a large bowl that contain the corn bread stuffing mix and pecans, and toss lightly to mix.

  • Drain the meat, reserving the marinade
  • Spoon stuffing into the pork chop pockets
  • Close pockets with wooden toothpicks

Charcoal Grill Instructions:

In a covered grill arrange preheated coals around a drip pan. Test the colas for medium heat over the drip pan area. Place the pork chops on the grill rack over the drip pan but not over the coals. Lower the grill hood, and grill the chops for 40-45 minutes turning once and brushing with reserved marinade. Cook pork chops until well done.
