Love coffee, then you will love these ribs! It may sound strange to think about using coffee, but it can make an excellent dry rub, or enrich a simple barbecue sauce.

Coffee flavoring is characteristic in many dessert recipes such a tiramisu, which by the way is out of this world with this rib recipe, but when you add coffee to meat dishes, it tends to bring out the meat flavor without the overpowering distinctive flavoring.

What I love about using coffee is that you can really change the sauce around by simply using a different roast blend, or different cut of meat. From steaks to ribs you will enjoy experimenting and discovering for yourself the unique and amazing dry rubs that can be created by using the wake up breakfast blend, or the cinnamon almond coffee blend. I must admit I get creative and grind up a little bit of a few blends and have had some crazy taste sensation. The only problem with this method is if you hit a winner, you ll never be able to recreate the recipe exactly!

Simple Coffee Ribs

 Ingredients:

  • 4 Cups Hickory Wood or other Wood Chips
    4 Pounds Pork Loin Ribs

Rib Preparation:

   1. Cut Ribs into serving size pieces
   2. Place ribs in a Dutch oven with enough water to cover ribs and bring   to a boil.
   3. Reduce heat and simmer for 30 minutes, drain off water and set aside.


Coffee Barbecue Sauce:

  • 2 Tablespoons Brown Sugar
  • 2 Teaspoons Cornstarch
  • 1 Teaspoon Instant Coffee Crystals
  • Teaspoon Ground Cinnamon
  • Teaspoon Ground Red Pepper
  • Teaspoon Salt
  • 1 Cup Water

Preparation of sauce:

  1. In a small saucepan stir together brown sugar, cornstarch, coffee, cinnamon, red pepper and salt
  2. Slowly stir in 1 cup water, and cook until thick and bubbly around 3 minutes

Coffee Chipotle Dry Rub

  • 1/4 Cup finely ground coffee
    2 Teaspoons ground chipotle pepper
    1/4 Cup smoked paprika
    2 Teaspoons cumin
    1/4 Cup Brown sugar
    1 Tablespoon salt
    1 Tablespoon garlic powder


  1. Mix together all ingredients
  2. Apply Dry rub to ribs
  3. Allow to stand an hour before grilling.

Have extra rub left over. Store excess in a cool, dry place Do not store in the fridge!

Prepare The Grill

One hour before soak the wood chips in enough water to cover them. Drain before adding to coals

       1. In your covered grill arrange coals around center drip pan
       2. Fire up grill, and heat to low heat
       3. Fill drip pan with 1 inch water
       4. Place 1 Cup wood chips on top of hot coals
       5. Place Ribs on rack over (indirect heat) drip pan area not directly over coals
       6. Brush ribs with glaze, and lower hood
       7. Add additional coals and chips every 20 minutes
       8. Grill ribs for 45 minutes low heat or until tender brushing occasionally with glaze

    This is a low carb recipe: about 2 grams of carbs per serving.
    

    Serves 4
