Easy Herb Pork Chops with Fire Roasted Sweet Potatoes

We don’t always think about what we throw on the grill, but choosing the right foods we can improve our diet, and make us healthier. The sweet potatoes is a great example of an excellent food that is easy to grill and very healthy to boot. Sweet potatoes are  antioxidant-rich, and have anti-inflammatory properties that can help with chronic health conditions such as arthritis. They are also an outstanding source of vitamin A (in the form of beta-carotene) and a very good source of vitamin C. The sweet potato you pop on your grill has healing properties as an antioxidant food that works in your body to eliminate free radicals that can cause cancer. So eat up, and enjoy grilling something healthy, and nutritious.

Ingredients:

4  Pork Chops about 4 oz each

Dry Rub:

1 ½ Tablespoons of the following Dry Herbs:

  • Marjoram
  • Sage
  • Thyme
  • Basil
  • Add in ½ Tablespoon lemon zest
  1. Rub mixture onto pork chops, cover and place in refrigerator for 30 minutes to 60 minutes


Sweet Potato slices

Roasted Sweet Potatoes

  • 2 Sweet Potatoes
  • ½ oz unsalted butter
  • Salt & Pepper To Taste


Tin Foil For Creating Packet

  1. Wash and scrub the potatoes under running water
  2. Cut sweet potatoes in half length wise, and then into bite size chunks
  3. Spray one side of foil with cooking spray
  4. Place sweet potatoes chunks on sprayed tin foil
  5. Add butter, and salt & pepper to taste


Form foil into a tent, roll top down, and sides up for grilling.

Grilling Instructions:

  1. Heat coals to cook over medium high heat or about 375 degrees
  2. Place sweet potatoes on grill, close the lid and cook for 20-25 minutes until tender
  3. Remove potatoes, and place off to side of grill while grilling your pork chops.


Grilling The Pork Chops

Place the pork chops on the grill for about a minute and close the lid. Open the lid and turn the meat 45°, close the grill cook for  about another minute. Flip the chops over, and close the lid once again. Rotate the pork chops just like you did earlier and close the lid once again. The pork chops should be done in about 5 more minutes check to make sure they are well done.
