Grilled Citrus Shrimp Skewers

Love summer, love shrimp, love grilling it because it is fast easy and simple to prepare. Buy prepackaged if you are short on time for my favorite soft shelled healthy grilled shrimp tacos.  Grilled shrimp is the perfect backyard  party dish, and if you want to spice up your shrimp tacos add a little dash of  smoky paprika, or a dash of ground chili pepper to wake up your taste buds. Healthy Grilled Shrimp Tacos

  • 1 1/2 pounds large shrimp, peeled deveined
  • 3 tablespoons unsalted butter, melted
  • 2 large garlic cloves, minced
  • 4 limes, cut into quarters
  • 1/2 teaspoon kosher or sea salt
  1. Skewer the shrimp. (If using wood skewers, soak them in water for 10 minutes beforehand.)


Dressing Ingredients

  • 1/2 cup fat free sour cream
  • 3 tablespoons fat free mayonnaise
  • 3 tablespoons milk
  • /2 teaspoon ground cumin
  1. Whisk together the sour cream, mayonnaise, milk, and cumin. Place in refrigerator

Butter Recipe for Shrimp

  • 3 tablespoons unsalted butter, melted
  • 2 large garlic cloves, minced
  • 4 limes, cut into quarters
  • 1/2 teaspoon kosher salt
  • 2 to 3 cups finely shredded green cabbage (can be found preshredded in produce section)
  • 8 — 6-inch corn tortillas
  • Fresh Tomato or Green tomatillo salsa from the deli section


Grilled Shrimp Taco Recipe Directions

  1. In a small bowl, combine the butter and garlic.
  2. Preheat a grill to medium coals (coals should appear to be covered with gray ash.)
  3. Brush the skewered shrimp with the garlic butter.
  4. Place them on the grill grate or in grill basket with quarted limes.
  5. Grill for about 4 minutes on each side or until the shrimp are opaque and the limes are turning brown
  6. Remove shrimp from grill, and lightly salt
  7. Grill the tortillas for 30 seconds on each side, then place inside a paper bag, tin foil packet or torilla warmer to keep warm & soft.

To serve

  1. Pull the shrimp off the skewers and divide them evenly among the tortillas.
  2. Top the shimp and tortillas with the cabbage, sour cream sauce, salsa, and serve lime on side to use as a spritz

5 Minute Grilled Lemony Shrimp

Ingredients

  • 16 jumbo shrimp, deveined in shell, raw
  • Extra-virgin olive oil, about 1/2 cup for brushing
  • Coarse sea salt and black pepper
  • 2 lemons -cut in half


Shrimp Grilling Directions

  1. Preheat a grill to medium- high coals (coals should appear to be covered with gray ash.)
  2. Butterfly the shrimp by slicing almost through lengthwise (leave shell on shrimp, this will keep the shrimp tender while grilling)
  3. Brush shrimps with oil, season with salt and pepper and grill 2 minutes on each side, until shells are hot pink and the shrimp its self is opaque.
  4. Place lemons on grill for one minute.
  5. To serve, squeeze grilled lemon wedges over shrimp.
