Cedar Plank Salmon

Some of you may be familiar with plank grilling, but many people are not. It is however not new; it is an old cooking method used Native Americans to cook meats, vegetables, poultry and fruit on woods such as: cedar, maple, alder and oak to give foods an amazing and unique aromatic smoky flavor.

Soak the Wood

Weight the wood plank down, and totally submerge it. Soak the plank, totally submerging it water, juice or wine for at least one hour.

Heat Setting For Plank Grilling

Heat Setting for Plank Grilling is medium heat, so a charcoal grills to medium low (350 degrees F). Place the soaked plank directly on the hot grill grates, and then the desired food will be placed on the top of the plank, and the grill closed.

You can preheat the planks for 2-3 minutes before placing the food on them, if you prefer to begin releasing smoke and flavor. Once the plank is preheated, turn it over with a pair of tongs and place your desired food directly on the heated side of the plank. Close the lid and allow your food to cook and soak up the grilled wood flavoring.

How Wood Plank Smoke in the Grill

The plank will produce a light smoke and the smoke from the wood will add the unique smoky flavoring depending on the wood you have selected.  If the smoke becomes too heavy, reduce the grill temperature or move the plank away from the hot coals and continue cooking.

If the wood becomes to dry it can start to catch fire on the dry edges. Because of this you should occasionally check the plank by slowly opening the grill, and keep a bottle of water hand to extinguish any flames that may occur, and also to moisten the wood.

Serving Off the Wood Plank

Times up foods done, now use a pair of tongs and oven mitts to remove the wood plank and grilled food in one motion to the side of the grill. The meats or other foods will
continue to cook when removed from the grill, so it may take a little practice to determine when to remove steaks to meet your personal taste preferences.
What I love and many others as well are that you can take entire plank straight to the dinner table. Clean up can consist of tossing the plank in the trash, or go green and reuse it in the fire pit!

Grilling Tip: Plank grilling or smoke board grilling is a delicious and easy way to prepare many dishes. One quick tip is some recipes call for the board to be oiled, I never do this as it causes the oil to burn releasing trans fats that are unhealthy, instead brush the meat, fish or poultry with the oil, and place on the soaked board on the grill.
