Traditional BBQ Grilling

 

 BBQBeef In Balsamic Beer Glaze

 

Ingredients

  • 1/2 can dark beer
  • 8 oz can tomato sauce
  • 2 tbsp virgin olive oil
  • 4 tbsp balsamic vinegar
  • 1 tbsp salt free mesquite grilling blend 
  • 4 boneless strip steaks trimmed

Combine all ingredients in a bowl  and mix well. Pour half of mixture in zip lock bag, and add steaks. Refrigerate  at 30 minutes or more.

Fire up the BBQ

Heat remaining sauce on the grill until thickened. 

Place the steaks on over med heated grill and baste with remaining sauce. Grill 4-5 minutes on each side for medium rare rare 145-150 degrees on thermometer. 6 minutes for medium 160 degrees.

 Traditional Grilling With an Open Pit BBQ

If you’d like to enjoy real barbeque with traditional flavor and style, consider building a BBQ pit. When you cook your meat in a BBQ pit, there’s a greater concentration of smoke and heat. The taste is out of this world.

This style of outdoor cooking is perfect for roasts and large cuts of meat. If your pit is big enough, it’s possible to cook a whole pig or a section of beef. Keep in mind that this is a slow process and can take upwards of 10 hours to fully cook.

There are essentially two different kinds of open BBQ pits you could build: the traditional or the modern. The traditional open pit is in ground and involves digging a hole. You then fill it up with wood or coal and set it on fire.

You can cook your food by placing it on a skewer and holding it over the fire. You can also lay a grill over the flames to hold the meat. You can even wrap up your food in foil and place it in the coals once the fire has gone out.

A modern BBQ pit is typically constructed above ground. Stone, brick and concrete are the most common materials used for building such a structure. A BBQ pit features a firebox where the wood or briquettes can smolder. You install a grill at a level that isn’t too close to the coals so the meat won’t burn.

With an open pit BBQ there are two ways of cooking your food. You can choose either direct or indirect heat. When you cook with direct heat, the wood or coals in the firebox are still actively burning, and you place the meat on a grill above the flames. To help control the temperature, the fire is usually located on one side of the pit and the food is placed away from it on the other side. This method cooks your food relatively quickly and is perfect for tender cuts of meat.

 

You can also use indirect heat to cook your meat, which is sometimes called pit cooking. Cooking with indirect heat involves using a very low temperature to cook the food. You start by lighting a fire and letting it burn for a while so the pit can absorb the heat. The goal is to build up a lot of heat in the interior of the pit.

The fire is then put out and the meat is placed onto the grill. You then need to cover up the pit. The heat that has been absorbed into the sides of the pit will do the job of cooking the meat. With this style of cooking, it takes a long time before your meal is done. But it’s ideal for tougher cuts of meat. Many people believe this is the best method for authentic BBQ flavor.
